How to cook gluten free spicy garlic indian eggplant

Wash and cut the eggplants in four sides

It should look like this on the top

Mix the chickpea flour, coconut, peanut powder, chilli powder, salt and sugar

Full the eggplants with the dry mixture like this

Splitter in some oil the mustard seeds and cumin seeds, add the green garlic pods nicely diced .

Add the eggplants and the leftover mixture also

Cover it after adding the half cup water

Garnish with cilantro , tastes great with warm rotis
