How to make veganchocolate mousse

First step is to refrigerate the can of coconut cream so that it solidifies over night. The next day when you open you'll see either at the top or bottom of the can, some liquid that looks like oil.

Discard that oil and only keep the white coconut cream!

To achieve one cup of packed dates, I had to pit and halve about 20 dates. If they are not soft, soak them in warm water until soft, then dry them off.

1 cup of firmly packed chopped dates!

Place your chopped dates in a food processor and blend. Then add 1/3 of your coconut cream and blend again.

Yes I know this doesn't look appetizing but you should taste it! It's really good :)

To make a finer mousse you can strain the dates mixture using a spatula and a strainer. I started to do that but then became so impatient I ended up doing half strained and half not.

Add the rest of your coconut cream and mix thoroughly.

Then add your cocoa powder and vanilla extract. You can add more or less according to your taste.

Place them in small bowls or ramekins and refrigerate for several hours. Then Voila! Here you have a guilt free dessert option :) enjoy!
