In large bowl, combine garlic, shallots, lemongrass, sugar, pepper, fish sauce, and thick soy sauce , & sesame oil.
Cut the pork 1/4 inch. Remember not to use lean pork since it will dry out when you grill it. Add pork and mix it well.
Transfer to contained and marinade for overnight. Refrigerate it for At least 3 hour.

Cut baguette to half, add butter in one side of the bread.Toast baguette until crunchy. Add pâté in the other side. Continue with lettuce, cilantro, carrot daikon pickle, onion, and jalapeño.
