How to make jamaican jerk chicken

Spray the crock pot with non stick cooking spray.

Wash your veggies. Chop your green onions.

Place into the crock pot.

Be sure to wear gloves or wash your hands extremely well when touching the jalapeño. Cut the top off.

Cut the jalapeño in half.

Cut out the white part and the seeds.

Should look like this after you rinse it with water.

Cut the jalapeño into strips...

And dice.

Place into the crock pot.

WASH YOUR HANDS REALLY WELL. you eyes will thank you later.

Open your can of pineapple chunks and drain over a bowl reserving the juice.

Set the juice aside for later and dump the pineapple chunks into the crock pot.

Drain and rinse the black beans really well. Add to the crock pot.

Cut your chicken breast into bite size cubes.

I did about three chicken breasts.

Add to the crock pot.

Remember the pineapple juice!!! Bring that forward and add two tablespoons of quick cook tapioca.

Add two tablespoons of red wine vinegar.

Add one tablespoon of Dijon style mustard.

Add 4-6 teaspoons of the salt free jerk seasoning. I did 5 which will give it more of a spicy kick.

Add 1/2 teaspoon of salt.

Add 1/4 teaspoon of ground pepper.

Whisk together well.

Should look like this when completely combined.

Add the mixture to the crock pot.

Stir together well!

Looks so good I could eat it now. But don't. It needs to cook!

Set crockpot on low

Set timer for 5-5.5 hours. I did five and it was perfect. You can also cook on high for 2 1/2- 2 3/4 hours if you want it more quickly.

Peel your navel orange.

And I can't read. This is a blood red orange but still yummy. Section the orange into pieces.

Add to mixture and stir together.

Yummy. Almost ready!

Take your brown rice and cook as instructions say on the box. If you have a rice steamer do that before the crockpot meal is done. Also I want a rice steamer!

Rice is finished.

Place 1/2 cup rice into a bowl.

Add 3/4-1 cup of the crockpot dinner and enjoy!
