Pre Heat oven to 350 degrees Fahrenheit
Gather your ingredients!
Peel your large organic red delicious apple.
Slice the apple into wedges and core.
Dice into 1/4 " pieces, as seen here using sharp knife on cutting mat.
Cut a fresh lemon in half.
Juice just 1/2 the lemon onto the chopped apples in a mixing bowl. Toss them afterwards until well coated.
Now add 1/8 tsp of cinnamon to the apples. Toss them again until well mixed.
Measure out 1 1/2 cups flour. I'm using Brown Rice Flour, because I prefer a "Gluten Free" bread. Any flour will work- all purpose, wheat, ect.. Place the flour into a large mixing bowl.
Add 1 tsp baking soda to the dry ingredient mixing bowl.
Just a pinch of allspice, add to dry ingredients.
1/4 tsp ground nutmeg, add to dry ingredients.
1/2 tsp ground cinnamon to dry ingredients.
1/4 tsp fine sea salt, to dry ingredients.
All the dry ingredients in large mixing bowl. Set aside.
In a small mixing bowl, add 8 oz unsweetened applesauce. (I'm using two of these single serve packets).
2 eggs, slightly beaten into the wet ingredient mixing bowl
1 1/2 tsp Vanilla Extract into the wet mixture.
1 Tbsp local raw honey into the wet mixture.
2 Tbsp canola oil or coconut oil if you prefer.
Now the 3/4 cup "sugar" of your choice. I am using Sucanat (an all natural cane sugar). Other options, brown sugar, white sugar, stevia, ect.
Whisk you wet ingredients together until well blended. Then mix up e dry ingredients until well blended. Now put e wet ingredients into the dry and with a spatula blend together.
Add in the 1 1/2 oz of chopped walnuts.
Continue mixing the batter and last you will add in the raw apples.
Prepare your baking pan. Spray with non stick oil and flour the sides.
Add the batter to the pan and its ready for the oven that has been Pre heated.
Bake in oven middle rack 40-55 minutes. **Mine was done to perfection at 50 minutes!
Check bread with cake tester and let rest for 10 minutes in pan before removing.
Slice and serve. Delicious plain, with some butter, with some jam... Enjoy!
