Chop the onions and the garlic cloves.
Also chop the aubergine and the zucchinis.
Fry the onions and garlic for a minute or so.

Add the tomatoes. I took like 4 cherry tomatoes instead of 1 ordinary one.

...chopped bell peppers. Finally add the water along with saltand pepper. Put on a lid and boil for somewhat 5 minutes.
It smells really good in the kitchen now. Remove the lid, and add herbs of your choice, I added dried thyme and rosemary. Continue to cook for another 15 minutes or so.
It didn't get as "saucy" as I like it so here I added the tomato paste, extra water and perhaps 100 ml of a homemade tomato sauce. It also works with canned tomatoes, but I didn't have any.
When done, put on a plate and serve, either as it is...
Or with feta cheese and perhaps pasta/bulgur/quinoa.
