How to make a fiesta chopped salad

All my ingredients for the salad & the dressing.

Season and cook the chicken (next time I will try grilling!). I used onion powder, paprika, garlic powder, cayenne pepper, fresh minced cilantro, salt, cumin, and black pepper.

Drain and rinse the black beans.

Warm the beans and corn just until heated through. Season to taste. I used kosher salt, pepper, lime juice, and some remaining bits of cilantro left on my knife.

Slice the tomatoes, season if you'd like with a little salt and pepper. I am a firm believer of seasoning throughout each step!

Slice and season the avocado. I LOVE this 2-in-1 slicer/masher I got from either target or Walmart. The masher is on the other end & looks like a flat flower.

Assemble the salad (greens, chicken, avocado, tomato, beans/corn, feta) then top with the dressing. Bon appetit!
