How to can applesauce

This is Fuji and honey crisp apples. Wash them up and remove any bad spots. I buy seconds and the local orchard for cheap and they're always beautiful!

Get some pots going with about 3/4 cup of water in the bottom.

I have this handy little apple slicer from ikea. It's amazing. Do not cut apples without one! Remove any seeds and rough center parts. Add your cut apple slices to the pot. Skins are fine to add!!

I Ended up with way more apples than I thought so I had to pull out more pots.

Cook them down for about 30-45 minutes. Don't boil. Just a nice rolling bubbling boil, not crazy boiling. Keep stirring. The point is that the apples are mushy and not rubbery.

Food process the apples! I let the motor run for 4 minutes for each batch. Then return to your pot. When all was said and done, all the pots when processed fit into one pot. Apples shrink!

Add your dash of cinnamon. Or cloves. Or sugar. Or whatever floats your applesauce boat. I like mine simple. Get your giant pot boiling. Lids need boiling too. I sanitize my jars in the dishwasher.

Process for 15 minutes in boiling water.
